Fill Jars With Sunshine




Cover the bottom of a pot with water; throw in sliced apricots; sprinkle over sugar; cook, stirring once in a while, on low-medium heat, until fruit has melted; taste and add more sugar if too tart; fill clean glass jars with sunshine; keep in fridge and eat with yogurt, ice cream, on toast, sprinkle with granola, make into an apricot crumble or apricot bars. Or give to a friend.

  1. Mmmmm! I always say that apricots are one of the very few fruits that are better cooked (unless you're in a warm country with a tree growing in your garden that is!) Gorgeous post & recipe xox

  5. Hi there, I just wanted to say that today is the first time I'm viewed your blog (via your comment on A Day In The Country) and I really enjoyed it. I used to live in Europe and have a number of angel babies in heaven (and one three year old baby girl here at home!!). I also love & adore the country life....working to make my own life more "country". So I felt some things in common. Look forward to following your blog!

  6. Couldn't find apricots at the Farmer's Market today. So, I'm gonna give it a go with the yummy peaches we bought :D Thanks for this post...can't wait to eat this yummy goodness!

    i have an heirloom blenheim apricot in my garden..and YEP...not ONE apricot on it this year...or any year :-{

    i had such high hopes for that tree...but it is a pretty tree..i enjoyed looking back on your 10 words...that would be EXACTLY my list too...

  12. Yup, I've been jamming too - we've done raspberry, apricot, peach and cherry...I think I'm all jammed out. Some are a little too runny for my liking too despite tests etc...a little annoying! xxx
